Does anyone have any experience of this working or whether immigration will refuse if you want to enter Doha a second time?
I don't know about the Immigration aspect. That may depend on your personal passport and visa situation.

But having used your boarding pass to go airside once, you might find that it won't let you go back airside a second time. That might then require a protracted conversation to put right.

The airside facilites aren't really meant for people to just pop in and use for an hour or two, so that conversation could be quite interesting. Immigration/security might also have a few questions.

Technically you are on a stopover rather than being in transit.

By the time you've paid to go to the airport and back again, wouldn't it just be easier and as cheap to eat in town?
