To be totally honest, NOMA tries too hard with wine pairings. They look for biodynamic, natural wine producers, they crazily overcharge for it, and that's how they make money. We just used the money we were forced to spend for drinks (only at lunch they have that) to get three good bottles. Maybe not great for pairing, but great wines for sure - especially Paolo Bea's Sagrantino.
I enjoyed our wine pairing; I thought that they did a good job matching the wines with the food. It was not the best pairing that we've ever had - last year we had better pairings at Geranium, Frantzén and El Celler de Can Roca - but it beats having just one bottle of wine for two people.
