To be totally honest, NOMA tries too hard with wine pairings. They look for biodynamic, natural wine producers, they crazily overcharge for it, and that's how they make money. We just used the money we were forced to spend for drinks (only at lunch they have that) to get three good bottles. Maybe not great for pairing, but great wines for sure - especially Paolo Bea's Sagrantino.
