SYD vs MEL or AKL pricing
For my dates, MEL is $400+ more expensive. BNE is indeed cheaper by $500 but involves an extra stop from SEA (LAX, and a 20h layover in DEN) and arrives 3(!) days later. AKL is a full $1000 more expensive than SYD/ SIN open jaw.

So I think I will end up just staying in SYD.

While it doesn't get cold in Sydney, July can be wet and damp. If you plan on going to the Blue Mountains then it can be cold so a it's a good idea to pack something warm. We were just over the other side of the Blue Mountains in July this year with some friends from the UK and they were very unprepared for -5 and blowing snow expecting Australia to be beaches and sunshine.
I live north of SEA. Cold and rain can be a year round thing here. LOL
