I'd say stick to Sydney for that length of time. If you added another two nights then I'd say add somewhere else. There's enough to keep you entertained. Anything in particular you want to see/do?

While it doesn't get cold in Sydney, July can be wet and damp. If you plan on going to the Blue Mountains then it can be cold so a it's a good idea to pack something warm. We were just over the other side of the Blue Mountains in July this year with some friends from the UK and they were very unprepared for -5 and blowing snow expecting Australia to be beaches and sunshine.
