My preference would have been Auckland, NZ but tickets from the USA to AKL are more expensive compared to SYD for those dates.
6 days/ 5 nights in Sydney is OK. A lot to do and see. Take a regional day trip out of the city.
July is mid winter in Australia. Melbourne can be colder, but not as cold as many parts of USA (no snow).
A good time to visit north Queensland or the red centre. But travel effectively would take the best part of day.
