There are several large military exercise areas off the coast of the UK in the southern North Sea. The flights that you mention have to route around these areas whereas the more northerly UK destinations like INV can route direct and avoid the MIL airspace.

You might see the NCL EDI and MME flights taking the more direct route on the weekends as the MIL airspace is usually deactivated then.
