So I told her to forget about extending the stay and just apply the suite upgrade. I might just stay somewhere else for the last night. So, she seemed annoyed, but said okay. Then, while she was entering what she had to enter, she said, "...just putting a note in here...". I asked, "What note are you putting in?" She sort of chuckled and said, "sorry, I was just thinking out loud." The only thing I can imagine is that she was putting in a note to not allow me to try to get the room extended as a suite! Why would she do that? Any advice?
Why would she do that? Because she informed you ahead of your reservation that this is Hyatt’s policy. She likely knows you will make an attempt to circumvent it so she is adding a notation about this.

Hyatt keeps internal files when guests do these or other actions. It’s one thing to do it without being informed, but another to do it after they’ve informed you.

You should’ve known ahead that your reservation quote literally says in the terms of booking - 100% Due at Booking Non-Cancellable/Non-Changeable.

Your best cast scenario at this point is to wait until you are 3 nights into your stay then book the additional night separately. On the morning you’re due to check out let them know you’ve decided to stay, and ask very very nicely if there’s any chance you can keep the suite, assuming it’s still available.

I had something similar happen, not a non-refundable rate, but one where the Category changed and I applied a SUA. I wanted to add an extra night, even at the new higher category willing to pay, Hyatt said to keep the original reservation I would need to cancel and rebook the entire stay due to their policies. Ended up just not staying the additional night. Adding that one night would’ve costed 30k (5k more than original) + 25k extra so 55k points total. I did ask the hotel what I could do hypothetically and they said what I advised above.
