Yes, call. I've done this on Southwest (they actually let you do it on the website!), UA and AA, but only for domestic travel using one-way or identical roundtrip itineraries.

One caveat: If roundtrip tickets are cheaper than one-ways for this itinerary (that can vary), I would call before you book the adults to make sure the airline can link mismatched roundtrip reservations (and if they say no, I'd HUCA at least once to see if you can get a different answer). If one-way tickets are the same price as roundtrip, I would just go ahead and book the adult fares first (all as one-ways) and then call to book the kid as I'm guessing that'll be easier for them to link.
