was surprised that there was even a meal given the late departure time. There was only one choice (enchiladas) and the FA took orders in order of status. Ended up that everyone who wanted a meal got one, as some brought their own food others went to sleep.

I'd say the Captain made the right decision here.
Catering should be there on time, and properly loaded. No questions about that. But if it's not, on a short domestic like this: operate the flight, don't hold it up waiting for a few late meals.
