Anyone have any creative ideas on how to get their cheaply? I really do not want to do 2/3 flights to get there.... could fly directly into Bari and out of Rome.

Have you considered flying to a larger airport (i.e. Milan/Rome) and then getting a train down to Bari, vice-versa. A google search will show rail options. Alternatively, see what LCC flights go in and out to Bari (wikipedia) and then fly to one of those destinations to connect - but this split ticketing of course carries it own risks.
