Using last night as an example, it's probably safe to assume many of those travelers are business travelers. If delayed, they could justify expensing a small meal and probably even a beer or two. Either way, I can't speak for everyone but the business travelers I know would MUCH rather sit at a restaurant with ESPN on than sit for four hours at the gate reading a book and eating a protein bar waiting for their flight to Aberdeen.
"I would like a restaurant to be open" doesn't mean "that would actually be profitable in the general case"
It might be profitable on the nights that there happen to be three or four highly delayed flights all at the gates immediately around that one outlet, sure.
