If MSP cared about this issue, they could offer the restaurants decreased rent/subsidize/make it part of the RFP requirement for the space. Seems like they’re rated “best” without this being a contractual obligation.
Fair enough. Like I said, I think this is a problem of "status quo" where there's arguably a need but not enough of a need to be noticed or corrected by most. I agree that most locally named restaurants in airports are in name only. I do think that's something that could be addressed in the future. I can see where airports like the predictably and scale of large, national companies but the bean counters in a land far away aren't concerned that about passenger experience as long as they are making reasonable profit while minimizing risk. Again, that doesn't always mean the best experience for the customer (or staff for that matter).

I think it's a little bit of a chicken and egg situation. People are accustomed to most places closing between 8pm and 10pm regardless of actual airport activity/ delays. That's why I mentioned that if a place does stay open late, they'd need to at least initially relay on word of mouth or advertising. To be clear, I'm not suggesting an airport party bar that's open until 2am but I could imagine a place that's regularly open until midnight or a little later depending on delays where you could grab a Coors, maybe some Buffalo wings, and watch the end of some games. I spoke about MSP as that's my home airport but this could really relate to most airports.
