You only need 1 qualifying flight per airline. Any additional flights don’t matter. So, if your first flight is good, you are all set.

Not all airlines play nicely with SAS app yet. I believe China Eastern, Xiamen and few others (?!) flights couldn’t be added to the app.
Not an issue. Just manage your booking via Xiamen website as you normally would. I believe Xiamen website allows you to add SAS number.

Make sure you add your SAS number on Xiamen website and/or at the check in counter. For most people Xiamen flights auto posted after few days.
