Looking at the Airlink - BA codeshare rules, it seems stopovers are allowed, typically 2 free of charge and extras at USD125. So I think the ticketing allows it, it's just the codeshare forces a same day connection. Whatever it is, is not straightforward.
Then you are over to whether lunch in (say) JER, NCL, DUB, EDI etc is worth the GUF? EDI may be best since if you book with Plus or CE fares you have more flexibility as to when to return to London, there are many services and so FCOD is likely to work.
