The majority of passengers don't have access to any airport lounge. Moreover, most economy passengers find it very hard to sleep on board. If we assume that most passengers have a meal in the city before leaving for the airport (let's say 4-5 hours before departure), moving the focus of the meal service to the later half of the flight would likely mean that many passengers would have to wait 10-15 hours for a meal. And sleeping on an empty stomach isn't easy.
