sure I can understand if you have the resources and are flying internationally, but I just don’t see the value of doing so domestically.

heck, I was on a recent flight that had empty seats up front because several people even turned down the cpu…..
I'm tall as well, but was in an auto accident on Maui several years ago, and have trouble flying for hours in a coach seat, even E+. Not the leg room, it's the "shoulder room".
I do what I can to sit up front (buying it outright, upgrading, re-faring when work buys me coach, accepting the UFC offer if they make sense). If I can't, I'll buy a second coach seat on miles, cancel if the upgrade comes through, and enjoy the empty middle seat if it doesn't . And make the person in the window seat's day in the bargain.
