not all delays are covered by the EU laws weather being a big one where eu doesn’t cover you. so your blanket statement about the law isn’t actually correct. The bad hotel food etal are just part of the travel experience, it happens and the airlines are not known for providing five star accommodations. Everything else you mention needs to be covered by your travel insurance if there were costs associated
