There are far more flights between AMS and DUB than the 1835 one on EI and the 2200 on Ryanair that you've mentioned - including on KLM itself, which would probably have made your KLM flight from the US cheaper, and removed the risk associated with self-connecting onto separate tickets, had you actually booked US-DUB with KL rather than just US-AMS (it's far more expensive to fly KLM to their hub; it's usually cheaper to fly with them via AMS on to any other European outstation).

Bear in mind that you are carrying all the risks by booking separate travel. I'd never allow just 2 hours between flights - particularly not when there are other options.

Also bear in mind that, depending on weather, flights out of Schiphol could be cancelled or severely delayed. KLM in particular has a tendency to sacrifice its short-haul flights when weather is challenging - and when weather is an issue at Schiphol, it affects KLM more than most because they're the largest player there. Ryanair and Aer Lingus are more likely to stick with their flights, but that doesn't mean that they won't cancel.
