I always leave them open until after the first meal time, but I will say that I've had my suite doors jam several times in the closed position, leading to a protracted battle with at the second meal time (i.e. breakfast on a TATL eastbound).

I'm flying EWR-CDG again on Sunday, which typically has the J cabin with doors, so will report back on crew behavior.
