AMS has decent airport hotels, including a couple right in the terminal, if you don't mind doing the overnight, or you can easily take public transportation for a night downtown or even in some nearby city such as Den Hague or Rotterdam, both of which have frequent direct train service to/from AMS airport.
I stayed at one closest to the terminal once. Took over 45 minutes to check in (it was a busy night) to pay 500 Euro for that. I have friends who booked an airport hotel with a shuttle (costs extra), but that night the shuttle wasn't running, so they wound up taking public transportation then trekking with the bags through parks and woods. I think the best option for cost and flexibility is to take the #397 bus from Schiphol half an hour direct to Museumsplein - - runs every SIX minutes. Easy and cheap. In the area around Museumsplein (absolutely smack central Amsterdam) there are a wide variety of hotels with very good rates. Best of all worlds.
