I asked the crew about this on a recent flight from Seoul.

They said the practice was to keep the doors locked (open!) until after the main meal service at the start of the flight was complete. This speeds up the service to everyone’s benefit. I think this is entirely reasonable.

With VERY rare exceptions, I have found Air France crews to be extremely professional and courteous - and proud!
