For the federal regs it is almost entirely driven by the duty time as defined (+ number of segments) in 14 CFR § 117. It's been a while since I've read the UA pilot contract so they may have more restrictive requirements but for legal purposes a standard crew, if they are properly acclimated and the flight departs at the right time of day could do up to 14 hours of duty as long as they were flying a line consisting of one segment during the duty period
Tables B and C in 14 CFR 117 provide the maximum **duty** time (which will virtually always be longer then the flight) for unaugmented (Table B) and 3- or 4- person augmented (Table C) crews
