Your pictures of Towne Center Mall bring back memories of when I used to live in Boca Raton, I think they might have renovated the water fountain since I was last there (circa 2015).

You also mentioned sushi, one of, it not my favorite genre of food and I really miss Daimatsu Sushi (what is now Yakitori Sake House and is nowhere near as good as Daimatsu) which closed in 2011 due to it not being popular with the crowd who loves lobster bombs and other Americanized Maki. Daimatsu offered some of the best nigiri and sashimi I have ever had in Florida, it was a gem.

If you Mother loves sushi, she should try Masamune Japanese Restaurant in Deerfield Beach which is good, not as good as Daimatsu, but another place I miss since moving back to Orlando.

Since your last report, my wife and I did go to Las Vegas, we ate at the Bacchanal buffet and we found it to be excellent, honestly as good as the The Breakers Sunday Brunch for roughly a little less than half the price. We had the chance to remind ourselves of the The Breakers Sunday Brunch recently to celebrate a close friends birthday and my wife and I both commented that while the The Breakers does one heck of a job, Bacchanal does a great job for a lot less money.

Regardless, it sounds like you had another wonderful time in Las Vegas, I look forward to reading more of your trip report.
