Or if I have a seat that has been selected several weeks before the flight, will it automatically try to block the adjacent seat for me at 72 hours out?

Trying to figure out how best to play the game!
you select your seat

At t-72, if the seat beside you is not occupied it will be blocked, along with lots of other seats.

From t-72 , other golds will see the seat beside you as available to sit in but silvers and below will not see it as available

From t-24, as more and more people check in, blocked seats will gradually be released to be shown as available.

so depending on load and how many owe are on board, the seat beside you may or may not remain blocked

3 risks,

someone picks selects it before T-72 (in which case looking at t-72 and moving if some did sit there can help)
a busy flight,
a late booking owe decides the seat beside you is best
