I have noticed this, too. We try to remember to buy a bottle of our favorite (non alcoholic) beverage before we get on board. In the past it seemed like the flight attendants used to start service very soon after lifting off the runway. Any passenger attempting to get up (at the same time) would be rebuffed-and when the passenger pointed out the obvious (that the flight attendants were up and about with the fasten seat belt sign on)--the FA's would say they had special shoes.
Now I am starting to think this is a more standardized procedure most likely for the safety of the flight attendants (just in case their "special shoes" aren't enough to overcome potential turbulence on climb out

Another thing I have noticed is that the flight attendants rarely ask if we want anything else besides the one drink we have been served. They used to ask if we wanted anything more when they were picking up the trash. They would make several sweeps in the cabin. It seems like they are not doing as many as they used to (It seemed like it used to be almost continuous!)
