I believe this clause is to cover situations where the points from a recent stay, happen to post while you're in the middle of your next stay, which would cause your status to change during the stay. Your status will not change midway through a stay, as a result of nights completed partway through your current stay. It doesn't work that way. Nights and points for any stay, are only awarded after the completion of the stay.
It might not work that way, but according to the t&c - as I understand them, there are no support to delay the new status level. If you can prove, which is easy because all is in the hotel files and Accor's app, that you have reached a new level, then you are entitled to that.
