It depends on which counter you are directed to at passport control. So you don't really have a choice unless you specifically ask to be seen by a specific border guard, but I think you really need a specific reason.
In my experience passport control is (roughly) 50/50 staffed by Swiss and French staff. The Swiss staff wear blue uniforms and they will give a CH stamp.
French staff have Police Nationale on their uniform, but the manager is often plain clothed. They will give a F stamp.
