As of this point, I am not sure why CX is not bring back the classic trolley service at least for starters and the final dessert course. We all know that we are flying business, not first class. It is nice to get a "first class" type service in business but airlines are simply not willing to invest in the manpower. Even if they want to hire more people, they can't find enough new people to hire. Why don't we go back to the trolley setup.
My last JFK-HKG on CX841 had the trolley service for fruit and ice cream.. short haul flights also have trolley service for drinks and dessert... Regarding trolley service for main course, while I also prefer to see the food before choosing, I also find it not very hygienic with people looking at it and having their spit all over the dishes when they tell the FAs their choice... haha..
