Singapore Airlines never gives up on the trolley service in business class. Honestly I am quite okay with it.
It makes sure that things run smoothly and the only thing that SQ needs to improve is the beverage refills for non-water/non-wine drinkers.
But SQ F/As are more than happy to grab you a cup of tea in between courses. They have the galley F/A prepared for those items. Even on their long haul flights, they use trolleys to deliver starters, and then a final run with cheese/fruit/dessert.

As of this point, I am not sure why CX is not bring back the classic trolley service at least for starters and the final dessert course. We all know that we are flying business, not first class. It is nice to get a "first class" type service in business but airlines are simply not willing to invest in the manpower. Even if they want to hire more people, they can't find enough new people to hire. Why don't we go back to the trolley setup.

For the pre-arrival meal/breakfast or light dinner, the one tray meal is just too small. It is just a hideous way for CX to cut costs. I want the old three-course breakfast - fruit starter --> yogurt/cereals/drinks-->main course.

Out of the three airlines you cite here, SQ F/As are perhaps the best out of the three airlines. They are fairly consistent in delivering the good service and most importantly, they are proud to work for this airline. Sometimes those little things matter because they have more motivation to protect the brand and the reputation of the airline.
