Thoughts?
But also, even if he uses it on his account, there is warning that says the Guest name must match the card holder, is this enforced? Or should the guest be added as a second guest in order to get the credit?

You just taught me something new

. I've used Amex travel so many times and never noticed the option to "use a different card". Good to know for future where there are cases where I want to use a specific cards for a sign up bonus but I have the traveler info saved on another profile I can book on the latter profile and still use that other card.
Or in other instances such as yours then, yes, you can go ahead and do it this way by booking yourself under your account and the cardholder will get the credit as long as you're booking is for FHR or THC. For the purpose of the credit Amex doesn't care which name is on the reservation.
Regarding having to book in the name of the cardholder I do know that many people book for others and it's usually fine as long as the person checking in shows any Amex card, it doesn't need to be the one used for booking. I've booked for my employees and they didn't have any issue. I didn't see where I can add a second guest during the reservation process, perhaps that's something you can teach me as well 😀?
