Generally yes, the Sapphire ecosystem is the best way to earn UA miles from credit card spend (and better than the Chase-branded UA cards). Note that the CSP is sufficient to do a 1:1 transfer from UR to UA miles and that the Freedom cards are often the best earners of UR in a lot of cases. Also note that as UA miles devalue, the 1.5 cpp Chase Travel redemption via CSR get more attractive, although a careful user of UA miles can still do better. The extra benefit of the Sapphire ecosystem is you can choose at booking which outlet is better.
From what I have seen, the insurance providers for Chase benefits are better than those provided for Amex (another common source of such insurance) but in all cases it's a fallback benefit that's outsourced to a third party and not something I would choose a CC based on. If you have a serious need for insurance, get a dedicated policy.
