Redefining slightly: E-Cls can be representative of the 'seat' you have and not so much the 'fare' you have such that: once you have an E-Cls seat, you will always have that E-Cls seat.
Example 1: LHR-HKG E-Cls, HKG-LHR E-Cls. If you change HKG-LHR to a day with no E-Cls but still R-Cls/cancel HKG-LHR, then the outbound will still remain E-Cls.
As you mentioned, there could be the case where there is an E-Cls return fare, but not an E-Cls one way fare. In which case, yes an R-Cls or W-Cls one way fare will be used.
Historical data is available and Cathay can give you the exact amount you will get refunded if you ask them.
