That's the first time I have seen 4/5 options be vegetarian; usually it's 2 (one special select) or at most 3.

I do think you are out of step with both catering and the median consumer if you think the only acceptable breakfast must contain meat. Although a "full breakfast" traditionally does have it, it's probably the most meat-free meal of the day. I'm guessing it's just a chance alignment that neither the quiche nor the "breakfast pizza" have a meat ingredient since many of the past quiches did.
