Keelung night market has a great reputation. It's a bit out of town but public transport is very good.

Shilin night market is closer to Taipei and has a good reputation.

I enjoyed Ningxia night market. Easy to reach by metro, less touristy than anything at Ximending. There's currently renovations underway to make the street even easier to walk. But stalls and restaurants are there. If you want to sit down in reasonable comfort I quite enjoyed Minji Cuijine.
