I don’t think UA flies out of JFK. Perhaps you mean EWR?
Timewise, 1:20 is plenty of time. MUC is a very easy airport in which to connect. You will arrive in Concourse H. LH goes out of G or K. G is in the same terminal ans your arrival. Even the fartgest G gate can be walked to in 30 minutes after you get off the plane. You’ll have to go through immigration. If you’re sitting near the front of the plane, that’ll get you a head start on the immigration lines. LH also uses K gates, which requires you going down below ground level and taking a short train ride to K gates. Trains run every couple of minutes.
I would start looking at the daily flight status for the MUC to FCO flights to see if there’s a pattern for which gates are used.
There are actually YouTube videos that, literally, walk you through getting from G/H gates to K via the train. As a very visual person, I found it very helpful.

As far as missed connection… there are no guarantees. They’ll put you on the next AVAILABLE flight. Hopefully, the next one will have empty seats but it’s possible it will be booked full.
