Honestly, since it's night time, I would just get a Grab all the way. The airport express is great and all, but there's a lot to be said for just jumping in a car and being dropped to the door.

As someone else said, there's a great breakfast spot right across the road from the hotel, like literally 20 metres away. It's called Ho Kow Hainam Kopitiam. Lines can be long though. Lots of interesting places to eat and check out around that area as well.
