Taiwan itself does not have that demand to fly point-to-point between Taipei and Seattle, and the demand between Taiwan and U.S. has been diluted by UA TPE - SFO, massive Cathay Pacific operations in TPE, and 3 Taiwan carriers BR, CI, JX
DL and CI interline, so you can connect (on the same ticket/PNR, with bags checked through). The problem is that you can't buy such tickets on delta.dumb or the DL app. A real time travel agent can put together the segments you select, assuming all connections exceed MCT. Another problem is that there might not be a published through fare for some routes you want. However, this doesn't mean that there's a "lack of connection options".
