The Canyon is worth it. However I'm not convinced that most of the other stops on the Panorama are that amazing. Gods Window is impressive, but most of the (many) waterfalls are fine but not exactly wow. Sudwala Caves maybe not optimal for someone over 70.
Pilgrims Rest is worth the trip if you aren't seeing any mining history elsewhere as it's a key part of the modern SA story, despite notionally not being part of the Panorama route. Harry's Pancakes in Graskop is the lunch stop to aim for.
