We've been to Oia Santorini on a day trip and while I'm glad we saw it I don't think we would want to go back. It really felt like like one of those destinations that was once amazing but ruined by the crowds of tourists and the various businesses and shams targeting them.
But mind you these hotels I mentioned tend to close in the off season so I'd double check before making final plans
Indeed both the Oia suites and the hotel on Como seem to be closed in November. In any case while we don't have a fixed budget these both would be rather more than I ever considered spending on a hotel. Like 500 euros/night seems extravagant to me, but 2,000 euros/night seems like another planet.
The Dubrovnik hotel you mentioned is interesting. It's open in November and really quite cheap by comparison. I suspect Dubrovnik in November is pretty quiet and chilly though.
