To answer your first question yes you can upgrade two one way tickets. While availability might show on all four segments of your flight individually, whether it also available at the cheaper (avios) married segment for both flights in a direction is another question. If not you will have to book each segment separately. You can upgrade the HKG-DOH segment from economy to first at 66 Qcredits.
