That's 100% correct, there was a stage during the pandemic where HKG was divided into two parts based on transit/destination, thankfully those days are long behind us and you've got some enjoyable lounging ahead.
How long is your layover and what are your flight timings? That, plus the gates used by your inbound JFK flight and outbound PEK flight, will determine your optimum lounging strategy, but if you've enough time then I'd suggest The Pier First is the best/only choice. If your PEK flight leaves in the evening and from the top of the terminal then you could swing by the Qantas Lounge just to try something different, or of course relax and freshen up in one of the Cabana Suites at The Wing First.
