Strategy of and how to book free stopover using Alaska Airlines miles?

I see that Alaska Airlines offers one free stopover per award travel flight like United. How do you book these? Presumably, you first have to find routes that have segments with your desired stopover city in it. Trial and error or is there a more systematic way to see what cities of potential interest may exist between your departure and arrival cities?

To make the actual bookings and only be charged for the regular miles price, do you simply find the routes per above, then choose the multi-city option? Or do you have to phone in for this?

And what's the max # of days you can have a stopover for?

Also wondering why I can't book certain flights using Alaska Airlines miles that can be booked using AA miles. For example, I semi-recently flew to HKG from JFK using AA miles but don't see these flights from the Alaska Airlines site. Can you snag these if you call in, or is some Cathay Pacific partner inventory, available using AA miles, simply not available when using Alaska Airlines miles?
