After booking through Chase, everyone on my PNR had their birthday off by 1 day.

Turns out this is just a website glitch due to timezones.. - if you change your computer's timezone to European time then the date will show correctly and won't glitch out if you try to modify it. Perhaps this will help some of you who are running into date problems in other fields such as passport expiration.
