Yes no problem. I’ve rebooked a Priority Reward multiple times. In effect you get one year to make your first booking, and a further year to use it, potentially after many rebookings. No need to restrict yourself to a route where you’re actually likely to use the reward, except to hold award space when it might otherwise disappear.
