Yes, in various interviews I've had with CX they have described a noticeable and seemingly sustainable uplift in premium economy bookings.

There was of course an immediate post-pandemic shift to 'premium' cabins (premium economy and business class) as soon as travel came back: I spent a lot of time at airports and chatting with various airlines and flights were going out with the front cabins fully booked and seats empty down the back, which was quite the reversal to the pre-pandemic norm. Moreover, any softness in the business/corporate travel market appeared to be taken up by leisure travellers.

At first this was said to be 'revenge travel' – people returning to the skies in style after so long an absence, and also spending the personal 'travel budget' they'd not spend in 2020-2021 (FWIW, I don't ascribe to that belief, I think people have $X to spend and what did not go on travel in 2020-2021 may well have gone on home renovations or other things, plus we've since had inflationary pressures which soaks up most 'spare' money regardless of what bucket it was intended for), as well as wanting the 'security' of more personal space in the wake of Covid and all that came with it.

So the broad expectation at the time was that come 2023-2024 things would settle back to the 'norms' of 2019 with a shift back to economy, especially as airfares appeared to remain stubbornly high for a bit longer than expected and the cost of living continued to rise.

But that doesn't appear to have fully kicked in, many flights still have very strong premium loads and this doesn't seem to be going away. And premium economy remains the 'sweet spot' for value, as long as the fares balance out.

So CX is betting that premium economy will remain a very solid proposition, and from what I can see that appears to be a safe bet.
