I used to think that. A Hyatt Place owner showed me the light. It's not powder but rather a liquid egg product. I still hate it and refuse to eat it, but now I correctly identify the target of my loathing.

but yes, it's all liquid egg product at these kinds of lounges and most mid-grade or lower hotel buffets. The Grand Hyatt DC's club lounge stands out to me in part because they've always served real scrambled eggs even though I don't expect real eggs at a mid-grade (i.e. lower than luxury) hotel like that in the US
