With google flights you can select infant with seat to check fares - so not sure why you aren't able to do so? Some airlines will have limitations on type of carseat, seat selection, etc. when it comes to infants so best check that before booking. Also, it's a matter of personal preference but some business seats lend themselves pretty well for an adult + infant. We've done it in the past without issue - including many ultra long-hauls.
