Both Take and Mizukami are "very traditional" in their nigiri preparation; they're just from different lineages (Take: Shimizu style with akasu shari, Mizukami: Jiro style with komesu shari)
If you like Jiro school sushi and your concierge is quoting Y20,000 at Mizukami for lunch, including some sashimi/tsumami, I'd recommend you go there; I'm sure you will enjoy it.
Can't comment on Sushi Masashi, never been.
