Sorry, but you clearly either don't understand what is convenience food (=tertiary processed foods) or have no grasp of how they are employed in professional kitchens. E.g., over 400 preparations of potatoes on offer on the wholesale market for professional kitchens, including many varieties of gratin potatos, latkas, duchess potatoes, Kartoffelknödel, etc. It would be incredibly naive to assume these are targeting the likes of McDonalds and KFC.
& you seem to have no grasp of the difference between a full service restaurant, that serves A la Carte food & other establishments that dont.
So do explain when i go to FCT & they ask me how i want my steak cooked & even they did that with the Duck Legs, and how do i want my Eggs Benedict ??? Your making out its all in a packet
As said & i know many Restauranteurs personally, they all prepare as much as they can in advance
